I Was Suzy Homemaker Today

IMG_4194I baked a cake and made dinner. I did not get my car cleaned out yet, or the millions of other chores I have yet to do. I ate cake and watched some more comedy on Netflix.

I saw on facebook and pinterest a pineapple and angel food cake mix cake (the only two ingredients), it is tasty, and was easy. I mixed it in the pan but next time I think I will mix it in a bowl, then put in a greased pan. I don’t like to waste the part that sticks to the pan.

I made baked chicken thighs and mashed potatoes, and that was it. I have been using bagged salad for the last few months. I am trying to simplify my life, to save time for therapy, gardening and fun stuff. I am never going to do the chicken thighs again with the bone and skin, too much work. It makes me want to be a vegetarian even more.

  1. I love these domestic gifts you share with everyone. It feels great, doesn’t it? Sometimes I still get mad if I spill something out of a bowl or knock the entire bowl over, but then I try to remember not long ago I did not think it would be possible for me to be alone in the kitchen again. 🙂

    So, how did you make the cake? It sounds light and delicious for a warm summer day.

    • The cake was easy, dry boxed angel food poured into a pan (I used 9 x 13 glass), then dump a can of crushed pineapple and mix. It was delish, I ate too much. If I make it again, I will mix it in a mixing bowl then pour into a greased pan. I have trouble pouring with one hand, I can’t tilt and scrape with the spatula at the same time. I say to myself, the wasted batter is the price I pay for having had the stroke.
